The Cozy, Make-Ahead Breakfast Your Busy Mornings Need

If mornings in your house feel anything like mine, you know how chaotic they can get. Between getting kids dressed, packing lunches, and trying to get everyone out the door on time, breakfast can easily become an afterthought. That is exactly why these Gluten-Free French Toast Cups have become one of my absolute favorite breakfast recipes.

These baked cups are soft, fluffy, and perfectly spiced with vanilla and cinnamon. Each bite is filled with bursts of juicy berries that make them feel a little extra special. Even better, they are baked into individual portions, which makes them incredibly easy to grab and go.

Because you can prep them ahead of time, they are perfect for busy weekdays. Simply store them in the fridge and reheat for a warm, comforting breakfast in seconds.

💛 Why These French Toast Cups Are a Game Changer

There are so many reasons to love this recipe, especially if you are feeding a busy family.

First, they are completely gluten-free when made with your favorite gluten-free bread, making them a safe and delicious option for those with celiac disease or gluten sensitivities.

In addition, they are incredibly versatile. You can easily switch up the fruit, adjust the sweetness, or even add protein to fit your family’s needs.

Most importantly, they make mornings easier. Instead of standing over the stove flipping slices of French toast, you can bake everything at once and have breakfast ready for days.

Ingredients

  • 1 bag gluten-free bread, cut into cubes
  • 2 cups milk, dairy-free or regular
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup blueberries
  • 1 cup strawberries, diced

Optional for serving:

  • Maple syrup
  • Whipped cream

👩‍🍳 Instructions

1. Preheat and Prepare

To begin, preheat your oven to 350 degrees Fahrenheit. Generously grease a muffin tin so the French toast cups release easily after baking.

2. Make the Custard Mixture

Next, in a medium mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon. Continue whisking until the mixture is smooth and fully combined. This custard is what gives the French toast its classic soft texture and rich flavor.

3. Soak the Bread

Place the cubed gluten-free bread into a large mixing bowl. Slowly pour the custard mixture over the bread. Then, gently fold everything together until all of the bread pieces are evenly coated. Be careful not to overmix, as you want the bread to hold its shape.

4. Fill the Muffin Tin

Scoop the soaked bread mixture into the prepared muffin tin, filling each cup evenly. After that, press the blueberries and diced strawberries into the tops of each cup. This not only adds flavor but also gives them a beautiful, bakery-style look.

5. Bake to Perfection

Transfer the muffin tin to the oven and bake for 15 to 20 minutes. The tops should be lightly golden, and the centers should be set.

6. Cool Slightly

Once baked, remove the muffin tin from the oven and allow the French toast cups to cool for a few minutes. This step helps them firm up and makes them easier to remove.

7. Serve and Enjoy

Finally, remove the cups from the tin and serve warm. Top with maple syrup and whipped cream if desired for an extra special touch.

✨ Tips for the Best French Toast Cups

For the best results, there are a few simple tips that make a big difference.

  • Use slightly stale gluten-free bread, as it absorbs the custard better without becoming too soggy
  • Do not skip greasing the muffin tin to ensure easy removal
  • For extra flavor, sprinkle a little cinnamon sugar on top before baking
  • If you prefer a softer center, bake closer to 15 minutes. For a firmer texture, bake closer to 20 minutes

🍽️ Easy Variations

One of the best parts about this recipe is how easy it is to customize.

  • Swap berries for diced apples and add a pinch of nutmeg for a fall-inspired version
  • Add chocolate chips for a kid-friendly treat
  • Mix in a scoop of protein powder to boost protein content
  • Use dairy-free milk and whipped topping to keep it completely dairy-free

Liz Satkowski Gluten Free Mom Colorado

I am married to the most amazing man, Tommy. I am the mother of three beautiful children Landon, Finn, and Daisy. For years I have been helping friends, family and others navigate the life of gluten-free living. I grew up in a gluten-free house, my mom and both brothers were diagnosed with Celiac Disease when I was young. My mom did an amazing job making everything from scratch in a gluten free kitchen. When I had my first child Landon my world was changed. He was born at 24 weeks because I have a short cervix. The doctor told us that he had a slim chance of survival and that his life would be plagued with severe complications. He survived and has minimal complications due to his prematurity, but when Landon was two he started getting rashes all over his body and he would constantly be sick. My mom advised me to get Landon tested for Celiac Disease. This was the beginning of my true GF journey. Shortly after he was diagnosed, I decided to go off gluten as well. Although I do not have Celiac Disease, I have found that I feel 100% better eliminating gluten from my diet. Recently Finn was having some issues with his legs and knees hurting. The doctor told me to take Finn off gluten to see if it was causing the inflammation and pain. Sure enough once we changed his diet the symptoms went away. We have Celiac Disease and gluten intolerance on both sides of the family. My sister-in-law and niece were recently diagnosed and my Grandma recently took gluten out of her diet due to an autoimmune disease. We are in a fortunate position that both of our families understand the purpose of living a gluten-free lifestyle. I am on a mission to help people create amazing gluten-free recipes and to see that this diagnosis is not a curse, but can actually be delicious.
