If you’ve been looking for a dessert that satisfies your sweet tooth without completely blowing your macros, this Gluten-Free Protein Cookie Skillet is about to become your new favorite recipe. It has everything you love about a warm chocolate chip cookie—crispy golden edges, a soft and gooey center, melty chocolate chips, and that fresh-from-the-oven flavor—but it’s made with simple, wholesome ingredients that you can actually feel good about eating.

Thanks to the cottage cheese and almond flour, this recipe is naturally gluten-free, higher in protein than a traditional cookie skillet, and made with less sugar than most desserts. While it still tastes like an indulgent treat, it includes ingredients that help make it more satisfying, making it a great option when you’re working toward your protein goals or simply looking for a more balanced dessert.

As someone who counts macros, I know how difficult it can be to find desserts that actually fit into your day. Too often, one cookie can use up most of your carbs and leave you hungry an hour later. That’s exactly why I love this recipe. The extra protein helps keep you feeling satisfied while still giving you that warm, gooey cookie experience everyone craves.

Even better, this Gluten-Free Protein Cookie Skillet comes together in one bowl with just a handful of everyday ingredients. Simply mix everything together, pour it into an oven-safe skillet, and bake. In less than 30 minutes, you’ll have a warm dessert that tastes like it came straight from a bakery.

Whether you’re making dessert for your family, looking for an afternoon treat, or trying to satisfy a late-night chocolate craving without reaching for processed sweets, this recipe checks every box. It’s kid-approved, parent-approved, and guaranteed to disappear fast.

Ingredients You’ll Need

One of my favorite things about this recipe is that it uses simple ingredients that create an incredible dessert.

Cottage Cheese

This is the secret ingredient that adds moisture while boosting the protein. Don’t worry—you won’t taste the cottage cheese once everything bakes together. Instead, it creates an incredibly soft and tender texture.

Almond Flour

Almond flour keeps this cookie skillet naturally gluten-free while adding healthy fats and a rich, buttery flavor.

Egg

The egg helps bind everything together while giving the cookie structure.

Maple Syrup

Instead of using large amounts of refined sugar, pure maple syrup adds natural sweetness and incredible flavor.

Chocolate Chips

Because every great cookie deserves plenty of melty chocolate chips.

Vanilla Extract

A little vanilla brings all of the flavors together.

Cinnamon

Just enough cinnamon adds warmth without overpowering the chocolate.

Baking Soda & Salt

These simple pantry staples help the cookie rise and enhance every bite.

Coarse Sea Salt

Don’t skip this! A sprinkle of flaky sea salt on top balances the sweetness and makes the chocolate flavor pop.

Optional Toppings

  • Vanilla ice cream
  • Whipped cream
  • Extra chocolate chips
  • Fresh berries

Is This Cookie Skillet Macro Friendly?

Absolutely! While no dessert is completely “free,” this recipe is made with ingredients that offer much more nutritional value than a traditional cookie skillet.

Because it contains cottage cheese, you’re getting extra protein in every serving. Protein helps promote fullness, making this dessert much more satisfying than a cookie made primarily from refined flour and sugar.

Additionally, almond flour provides healthy fats and fiber while keeping the recipe gluten-free. Combined with the moderate amount of maple syrup, this dessert is a wonderful option for anyone trying to enjoy sweets while working toward their macro goals.

If you’re tracking macros, simply divide the skillet into your preferred serving size and log the ingredients you use. You can also increase the protein even more by serving it alongside a scoop of high-protein ice cream or Greek yogurt.

Can you taste the cottage cheese?

No! Once baked, the cottage cheese completely melts into the batter and simply creates a soft, moist cookie.

Is almond flour the same as almond meal?

No. Almond flour is much finer and creates the best cookie texture.

Can I make this ahead of time?

Yes. Prepare the batter a few hours ahead of time and refrigerate until you're ready to bake.

Can I add protein powder?

Yes. Add one scoop of vanilla protein powder and, if needed, stir in a tablespoon or two of milk to maintain a soft batter.

Liz Satkowski Gluten Free Mom Colorado

I am married to the most amazing man, Tommy. I am the mother of three beautiful children Landon, Finn, and Daisy. For years I have been helping friends, family and others navigate the life of gluten-free living. I grew up in a gluten-free house, my mom and both brothers were diagnosed with Celiac Disease when I was young. My mom did an amazing job making everything from scratch in a gluten free kitchen. When I had my first child Landon my world was changed. He was born at 24 weeks because I have a short cervix. The doctor told us that he had a slim chance of survival and that his life would be plagued with severe complications. He survived and has minimal complications due to his prematurity, but when Landon was two he started getting rashes all over his body and he would constantly be sick. My mom advised me to get Landon tested for Celiac Disease. This was the beginning of my true GF journey. Shortly after he was diagnosed, I decided to go off gluten as well. Although I do not have Celiac Disease, I have found that I feel 100% better eliminating gluten from my diet. Recently Finn was having some issues with his legs and knees hurting. The doctor told me to take Finn off gluten to see if it was causing the inflammation and pain. Sure enough once we changed his diet the symptoms went away. We have Celiac Disease and gluten intolerance on both sides of the family. My sister-in-law and niece were recently diagnosed and my Grandma recently took gluten out of her diet due to an autoimmune disease. We are in a fortunate position that both of our families understand the purpose of living a gluten-free lifestyle. I am on a mission to help people create amazing gluten-free recipes and to see that this diagnosis is not a curse, but can actually be delicious.
