Do you have a favorite Christmas cookie from your childhood? My Grandma’s Italian Pizzelles are my favorite! The smells of them cooking brings back the best memories. So delicate and beautiful, filled with anise or your favorite flavor (vanilla, lime, orange, chocolate). They are a tradition I’m happy to be able to share with my kids. Thankfully it was easy to turn them gluten-free and dairy-free. I am so thankful I can carry on the tradition of these family cookies and make them safe and gluten-free for me and my kids.

Grandma’s Gluten Free Italian Pizzelles

Ingredients

Instructions

  1. In a mixing bowl combine eggs, butter and sugar and cream together, then slowly add flour, baking powder, vanilla and anise.

  2. Refrigerate for 30 minutes to 1 hour.

  3. Heat pizzelle iron and lightly spray with cooking spray, then drop 1 tablespoon of dough onto the iron and close.

  4. Bake for 30 seconds to 1 minute, until golden brown, using a fork remove pizzelle and place on wire rack to cool and immediately dust with powdered sugar.

  5. ENJOY!!!!
